Farofa is made from tapioca flour, vegetables, meat, nuts and fruit. Tapioca flour is produced from the roots of manioc (also known as tapioca or yuka). Tapioca was used by the natives even before the arrival of the Portuguese conquerors in 1500.
Farofa can be used in various ways and there are countless recipes. The preparation depends on the individual, on yout taste preferences and available ingredients.
The most basic recipe, which is also often on the menu, is fried onions and garlic with tapioca flour.
Farofa is the main side dish to feijoada (Brazilian bean stew), rice and Brazilian BBQ. It is also used as stuffing for poultry. In many various it contain raisins, nuts and/or finely chopped fresh fruit, such as apples and bananas or dried fruits. In West Africa, the version of manioc flour is known as "garra" and it is used in various dishes.
